This seems like a fun thread. Mind if I contribute? Fortunately, my mom has about three bookcases full of cookbooks alone and even more full of art books.
Taken from "Tastes of the Adirondack Restaurants."

Pumpkin Bread
Makes: Two loaves.
2 c. sugar
1 c. vegetable oil
4 eggs
1/2 c. water
3 1/2 c. flour
4 t. cinnamon
2 t. baking soda
1/2 t. ground cloves
2 c. canned solid-packed pumpkins
1 c. pecans, chopped
1/2 c. raisins
1. Combine sugar with oil.
2. Mix water with eggs and beat in slowly, one egg at a time.
3. Add pumpkin, raisins, and nuts. Mix well.
5. Pour one-half mixture into each of 2 well-greased and floured load pans.
6. Bake at 350 degrees for one hour.

When making it, I tweak it to my tastes in measuring and typically leave out the raisins and sometimes leave out the pecans as well. :)
