I probably suck so badly at French, as I took it for four years in school then stopped after my second year of high school, so I'm trying to brush up on what I do remember from school and what little I've gathered from my old French worksheets and textbooks.

You did really well for not having used it in years! Here are just a couple of corrections:
Je - no apostrophe. The only time you use j' is if the next word starts with a vowel like j'adore.
parler en français - You speak "in" French, not "a" French.
français - In French languages aren't usually capitalized.
non bien - I think you might be trying to use Spanish rules here like "muy bien" (doesn't speak Spanish so forgive any misspellings >.>). In French we would probably say "pas très bien" meaning ["not very well"].

I'm glad it wasn't too bad. I haven't been in French in so long, I honestly miss it, it was one of my favorite subjects. I wish I could learn it better. I'm just a slow learner when it comes to languages.

Perfect! The only thing is that you don't need that "c'est" in the beginning. You can just say "comme ci comme ça". If you're a girl you should also put an "e" on the end of fatigué since French adjectives tend to differ depending on if the noun is male or female. That's one of those tough things that's really different between English and other languages.
Moi aussi je suis un peu fatigué et je commence avoir mal à la tête... Qu'est ce que tu as fait aujourd'hui ?

The way you phrased it [je mange] is present tense. Doing the past tense is a bit more complicated. I could explain it but it might be easier if you looked at an actual lesson for it. If I find the time that could be a good idea for a lesson I could write up. It's been a while since I released one of those...
They can depend on gender. If it's two girls or more, it will be "elles", for males it is "ils". For a mixture of boys and girls you also use "ils".
