I love guacamole, but it's hard to get it good. It's good if I make it from scratch, but only the very day I make it. After that first day it's not so good.
Tostitos had a really good guacamole dip, but now I can never find it...

Ooooh, I need to give you my mom's cole slaw recipe! It's nothing like most cole slaws which are, frankly, gross. It's not sweet at all, she doesn't put in sugar like most people. She puts dill in it, and of course vinegar, and it's just so refreshing. :drool:

So I was craving something kind of cold (it's so hot here!) and beans. So I looked up some bean salad recipes and used them to sort of free form a bean salad recipe. It came out so good! I just drained a can each of white beans, black beans and corn (I would have used chickpeas too, but we're out :cry:), and partially drained a can of diced tomato. I combined those all in a big bowl with a splash of vinegar and olive oil, cumin, cilantro, lemon pepper, minced garlic, and a few other spice mixes I have (though it'd be fine without those) and... epic deliciousness. :drool: I'd recommend that for a good quick summer side dish recipe for you all. :D

I usually have to rope my mom or some other outside source to help when I'm coming up with a dish. I'll get an idea for the flavor and texture, and I'll know a few things I want in it, but then I can't come up with the rest of the recipe. :lol:

I tend to get overwhelmed when I look at big recipe sites like that. But the Betty Crocker one is pretty good. I like that they have a selection of vegetarian recipes that are "normal." Most sites' vegetarian recipes are these crazy, pretentious things that... just no one eats like that. :lol:
