Taiyo ~ The cheesy potato pancakes sound yummy.

I've been running so crazy this holiday season I didn't even get any cookies or anything made.
My mom was supposed to teach me how to make her bread, but we thought it best if I stayed away because I caught the stomach flu a few weeks ago. My dad is still going through cancer treatments so we don't want to expose him to anything if we can help it.

I'm gonna have to try that soon.
Right now I'm trying to come up with some ideas of what to do with some roasted potatoes & carrots.
We also have some leftover ham.
I might just make it into a creamy soup tomorrow.

Mmmm roasted tatoes...

One of these days soon, I'm going to do some beer battered mozzarella sticks. I've got a couple different beer batter recipes, so why not?

I love mozzarella sticks, but I have never tried to make them myself.
The roasted potatoes & carrots were so good, but sort of tired of eating them with just the ham, but I hate to waste food so we need to do something with them.
I'm sort of thinking about just smashing them up a bit & adding some cream of mushroom soup to it & maybe some peas. It's gotten cold here in the last few days so I think soup would be a good dinner.

Fried foods in general taste sooooo good but are so bad for us, haha. Although sometimes when they taste greasy, it is a rather unpleasant feeling, if you know what I mean.

The sight of oil doesn't seem to bother me too much. I dunno, I like the golden brown color of it. But the smell... I used to have to empty oil fryers at a deli. Smelled horrible. So potent.

I'm one of those people who, if I see a ton of oil on my pizza, I will hold the slice vertically so all the oil will drip down into puddles onto my plate

I've done that. I prefer my crust moist but dry. Anything above that and the pizza completely dissolves if you microwave leftovers, so too much oil makes the crust soggy and wet.

I like pizza crusts that are a bit crispy, but not too dry either
