after the halloween event is over, do we still get to keep are event coins we earned until another event? or do they disappear and reset for the next event?

They disappear and reset, so be sure to spend them all before the event ends.

Actually, the nature of the universal currency we have now (coins for all events now, instead of theme specific ones), means they tend to roll over. Adam/Antagonist is talking about the older system, this one is new this year.
