Ah yes, taco meat always needs to be well drained, or you're going to get a lot of grease in your system. I think rinsing it is probably a good move on your part.

I'm sure you and your family can work out the details when you go shopping. You just need to get a list of foods you can and cannot eat and go from there. :yes: I think you'll find it's not as hard as you expect it to be, but you will need to get used to not eating as many grains. Sweets and bread products were really hard for me. I've learned how to make a couple of good tasting sweet things from recipes online, but generally, I just don't eat them. But also, if you don't eat them, you no longer crave them! It's a process, but I really don't crave sugar as much as I used to. Sure, chocolate always sounds awesome, but I just can't eat it.

Yeah, it's hard to not be lazy when it comes to food, but it's worth the time and effort spent in the end.

I spent several hours in the kitchen last night making up food for the next couple of days. I put some black beans in a crockpot with tomatoes, garlic, cumin, red pepper, salt and pepper and those will be a good source of protein for me for the next few days. I also had to cook some turkey tenderloin, quinoa and green beans for my actual dinner. THEN I had to cook my lunch and dinner for today (since I won't be home to eat dinner) -- 1/2 a grilled chicken breast and raw veggies for lunch and then the other 1/2 chicken breast, quinoa from last night and salad for dinner.

I also proceeded to make homemade almond butter (one of the few nut butters I can have) after that. XP

So yeah, you do have to plan in advance, but I actually am getting to enjoy cooking, since I have to spend so much time in the kitchen. XP

I am wise and full of sage life advice, so if you ever need any of that, I've gotcha covered. ;)

Su - This site has a list of things that don't contain gluten, might, and pretty much always.

Gluten Free Diet, Gluten Free Recipes, Gluten Free Food

You should still check labels, but this is a good start to point you in the right direction. n.n

@ Sizzla - Yeah, taco meat is terrible.
And I'll always dab off my pizza. And spaghetti is really bad, but I can't ever do much about that.

I am a major sandwich person, so not having bread is practically impossible for me. :/
Is celiacs really all that bad? I mean, I know that if I do have it then its just causing my anemia and fatigue, or be contributing to them. So, it wouldn't kill me to still have some gluten. I'd just have to try to eat a lot less. ><;;

The thing is that I do enjoy cooking a bit, but it gets rather hard sometimes in my house and with my family. The place is usually a mess unless i've cleaned it or my aunt just cleaned it that day (she's like our maid, pretty much, and comes over 2 days a week to clean). So if I didn't clean it that day, and even if its the day after she cleaned, the house will already be totaled. My parents hate to clean up after themselves, especially after a meal. If they cook a big dinner, then the kitchen is just a mess! And when i'm making something, I like everything to be spotless and put away, so that there aren't useless things in my way, and so I can find things easily. I also prefer to usually not have other people right there, because they tend to get in my way and I become grumpy and dont have as much fun. ><;;
But I think that if I just push myself, then I'd be able to do it, but we'll have to wait and see. :]

And I just hate having to check labels or ask whats in food before I get it. It takes up time, and I'm usually always in a hurry when it comes to getting food.

@ shaman - You mean tacos, pizza, and spaghetti?
I love all three of them, but I'm just saying that they're quite bad for me usually because they're very oily

I can't remember what osteoporosis is. Cancer sucks, but I already have anemia, so thats one down! ><;;
Man, that totally sucks, though. No gluten at all? :< But I love so many foods that have gluten in them. :gonk:

Seriously, though, they make a lot of gluten free foods that would normally have gluten in them. They're just a little bit more expensive.
Osteoporosis is when you lose bone density. So you get brittle, fragile bones.
Also, eating gluten with Celiac disease can cause you to develop allergies to things like dairy.

Looks like I should stop eating gluten now just to be safe and not wait for the test. Crap, that really sucks.
I would become a very depressed person if my bones got bad. I am really active, so the last thing I need is to become fragile, because i'm already way too klutzy. I dont usually really cause much damage, but if I got that then it would definently be bad. Well, shoot.

Well, a couple more weeks of gluten is not going to make much of a difference. And it's a big life change.
If you were in danger of developing those issues before the test results came in, your doctor would have already discussed dropping gluten from your diet. You should be okay until the test can be done.

@ steel - Well, during the Upper GI he just saw a mark on my small intestine that made him a little worried, and he'd rather be safe and check for celiac's. So, he's not like really worried, but he warned us of the possibility. So, if I do have it, then it definently isn't severe at this point, since it was only a little thing that made him wonder, but good to prepare myself just in case. And then i'll be all the happier if I dont have it! 8D;;

Fast food is just easier to work in, in my opinion, because if you work in the back, you never have to deal with the customers. Which is strange that I would enjoy working in the back considering my favorite of jobs is telemarketing...

@ steel - Yeah, definently. I hate going to the doctor and taking tests. I'm always scared that I might have something really bad, which now it turns out I might. D:

But its good to have them run the tests to know what you do and dont have, that way you dont have to kind of wonder.
