So I love to bake and my husband loves to cook.

Just tonight we had quiche and I just finished two banana bread loaves.

I've looked around this forum and have not been able to find another thread similar to this, so I'm starting a recipe and cooking thread because I know that other people will probably like to try a few of the simple, quick to make, delicious and healthy recipes that are out there! I hope to reserve a few posts to make links to the various recipes so that we might even eventually have a little Mene Cookbook if it's popular enough...

So I'm going to start off with my Nonnie's Specialty Banana Nut Bread.

Preheat your oven to 350 degrees. Take a nice loaf pan or round pan and grease it with a thin layer of butter or oil.

Dry Ingredients:

3/4 cup of sugar
2 cups of flour (for extra healthy, use 1 cup wheat flour and 1 cup white flour)
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Make sure to mix all of these together in a bowl so that they are evenly distributed! :)

Wet Ingredients:

2 eggs (beat together in a separate bowl)
2 tsp vanilla
3/4 cup vegetable oil
1 whole banana (preferably somewhat ripe)

Mix all the wet ingredients and then pour them into the dry ingredients, until blended completely together.

The batter should look like a smooth pale yellow.

Extra Bonus step (optional): Stir in 1/2 cup raisins and/or nuts

Once you've done this, place the batter in the pan and then bake for an hour or if when you poke in a long toothpick, it comes out clean.

The prep time for this recipe is about 15 minutes as long as you already have the ingredients in the kitchen. Banana bread is the perfect thing to make for a study session, or a healthy dessert.

Yay! I love this thread already! I love to cook and bake and my fiance is a big cooker too :]

I just made this a few hours ago, absolutely amazing!

French Omelet

You will need two eggs, two tablespoons of water, about an eighth of a teaspoon of salt, a dash of black pepper and one tablespoon of butter.

First, Heat an eight inch non-stick skillet (with flared sides) over medium heat on your burner until the skillet is hot. While it's heating, crack the eggs into a small bowl and add the water, salt and pepper. Beat the mixture with a fork until it's all well combined, not frothy.

Next, Add your butter to the skillet and once it's melted pour your egg mixture carefully into the pan. Start stirring around the egg gently and continuously with a wooden or plastic spatula until the mixture resembles small peices of cooked egg, surrounded by liquid egg. Stop stiring at this point and cook for another thirty to sixty seconds until mix is set, but shiny.

If desired, spoon filling across the center (cheese, onions, bacon, bell peppers, ham etc.... all diced before hand!)

Last, with your spatula, lift edge and fold over to one third of the way. Remove your omelet from heat at this point, and fold the other side over to cover the third that you previously folded.

Transfer the omelet to a warm plate and breakfast is served!

One of my favorite recipies ever :] and it's so easy and yummy. Me and my fiance have found ourselves cooking this at all hours of the day and night! haha

I'm sure everyone knows this, but I love to make deviled eggs!!
All you really need is maybe half a dozen eggs (makes 12 deviled eggs)
some mayonnaise
mustard
salt
pepper
and a pot of water to boil the eggs in

Now my grandma never really measured her ingredients but I guesstimate, and I'm the only one who can really make them taste like hers. Don't worry I'm the only other person who really makes them any way. (my moms not that great of a cook)

So you boil the eggs, cut them in half and drop the yolks in a bowl.
Add about 2/3rds of mayonnaise (comparing to the amount of yolks you have)
Add about 1 and a half tablespoons of mustard
I'd say about a teaspoon of pepper and half a teaspoon of salt
mix it together and give it a taste, if your good at tasting you'll know if it needs a little more of anything. Its shouldn't be too creamy or too lumpy, and the mustard should even out the taste of mayonnaise.
now my grandma also put a small tap of paprika on the top for a little extra flavor.
There you go delicious deviled eggs. *mwah* lol

I'm terrible at cooking, but I love banana nut muffins/banana bread. DD: Sounds like your recipe has a huge amount of sugar in it. I've made banana bread decently with ~2 cups flour (whole wheat) and 1/2 cup brown sugar. (Just a note.)

I've made green pea curry before pretty well. However, I can't give numbers because I estimated the amounts. :T Sorry. Maybe someone could test it out? Anyway.

You basically get like about a cup of green peas (without the pod), and cook with about two cups of water. Don't worry about it being too mushy, because the next step is the blend the mixture. I like mine really really smooth. :)

Then you put the blended mixture back into the pot, add... about... 1/5th cup of milk? And curry powder. It shouldn't have to remain on the fire for too long, like, two or three minutes max, or else it'll burn. Salt to taste. Add pepper to taste. If you want, you can add some chopped green onions on top for effect, cheese for flavour, or potatoes for meaty substance.

It's basically a curry without beef or potatoes. And it's weird looking, because you kind of expect a really cleanish, light flavour from the soup and you get curry instead! :D

I love to bake and my boyfriend loves to cook. We make a perfect combination, I think. The only downside to it is that we don't always see eye to eye on making exact messurements lol. I saw a devilled egg recipe up and I LOVE those things hehe, my boyfriends mother has always made them, but because of grams having health problems, she said she couldn't season them. I did not have the luck of knowing such a thing the first time I spent Thanksgiving with them and hurt her feelings because I made a horrid face at the blandness of it. I dunno what she did put in it, but it tasted really bad. And I have no problem at all eating hardboiled egss so I know she had to have put something else in them. The next year I was determined to have some devilled eggs that tasted yummy to me and so I got her permission to make a small amount for me and my boyfriend. His uncles asked if they could have a one each to try and so I allowed it. Now they're mad at me because I probably won't be here to make them this year. And his mom is mad at me because they say they don't want hers anymore.

As for recipes, I have a dirt cake recipe that is my ultimate favorite, but I noticed you said you wanted healthy recipes, so I'll have to go with this one:

Sausage and Potatoe Coddle:

1 lb pork sausage links
1/2 lb thick sliced bacon, cut into 2 in pieces
4 large potatoes (2 lbs)
2 large onions, sliced
1/4 cup parsley, chopped
Salt/Pepper
2 cups water

Cook Bacon in skillet and drain with paper towel. Brown sausages in bacon grease. Drain with paper towel, then cut into 1/4 inch pieces. Peel and slice potatoes into 1/4 inch thick slices. Alternate layers of ingredients, seasoning the potatoes with salt and pepper. Take 2 tablespoons of the skillet grease and boil with 2 cups of water. Poor over casserole. Cover and bake at 350 degrees farenheight(sp?) for 45 minutes, then uncover and cook for another 15 minutes or until potatoes are brown and soft.

A quick and easy meal is Chicken and yellow Rice. All you need is a package of Sapphron(sp?) Rice and a can of Chicken Follow recipe on back of rice package and add chicken when water comes to a boil. It takes about 30min total to make but all you have to do is boil the water and put the two items in.

I don't cook much, but I've recently come across something that's -VERY- fun to make and eat: Rainbow Cupcakes.

Just grab some basic cake mix and mix it as usual. When it comes time to fill up the cupcake cups, divide the batter into different bowls, the amount depending on what colors you want. Add in food dye, then scoop in differing amounts of the colored cake mix in any order, bake as normal and you're done. =D

...It's actually easier to watch this video here to get an idea of what I babbled about. The video goes through each step and gives some reeeeally cute cupcake topping ideas.

I love love love to cook. Sweets, desserts, meals, appetizers.. :D If I could make a living as a baker or something, I would. but it's a dieing art I fear :(

I have to smile when I see threads like this because I LOVE cooking. =)

I have one recipe that I came up with, well... a couple actually. But as a warning, I just tend to throw things together, so please bear with me as I write these out. So here:

Pineapple Mint Lamb Chops

2-4 Lamb Chops, depending on size
1 Can of Pineapples
Peppermint
Margarine

Put a skillet/frying pan on the stove on medium heat. But about a 1/4 stick of margarine into the pan and allow it to melt. Add a few pinches of Peppermint into the pan, and pour in some of the Pineapple Juice. Wait about fifteen seconds, then add the chops, trying to fit them all into the pan. (They taste better the first time around)

WARNING!!! THE SMELL IS AWFUL. IT TASTES BETTER THAN IT WILL SMELL!!


Continually flip the chops in the Peppermint/Pineapple Juice mix, until the chops are SLIGHTLY pink on the inside. Once this is achieved, turn off stove, and pull the chops out. Pour the Pineapples Chunks into a bowl, and serve with the chops.

The only reason the pineapple juice went in, is to keep the lamb from drying out. =)


Here is another recipe that I created myself. This one may sound weird, but it came out yummy.

Apple Cider Pork Chops

2-4 Pork Chops
Margarine
Apple Cider

Again, put a skillet/frying pan onto the stove and turn onto medium heat. Put the margarine into the pan and let melt. Pour about a half a cup to 3/4 cups of Apple Cider into the pan, and wait about 15-20 seconds. Add the Pork chops, and cook until how you desire them.

The reasoning for the Apple Cider is because I wanted something different to do Pork Chops with, instead of herbs. It came out as a kind of glaze, and tastes really yummy. You can actually barely taste the Cider. =)

I'm not much of a cook. Though I can fix a mean batch of Bisquick pancakes. All of these recipes sound so yummy. I think I might be tempted to try some of them.
