Help me, English people! This is a tea emergency!
Yesterday I made a lovely chai tea. I poured in a little half & half to make it nice and creamy, but as I stirred the tea, the milk got all gross and separated into tiny little bits. The milk itself was fine, it was only once I added it to the tea that it did this.

I was under the impression the English put milk in all their tea. [cry] I just wanted to make it similar to a chai latte!

Hehe, seriously though, I don't know why your half & half seperated if it's not moving towards being off. It's a mystery!
Bearing in mind that half & half isn't a thing that exists in this country, it's milk, or cream, there's no in-between options. |
So it's not like the water was too hot or something? I was wondering if there was some "let the tea cool some before you add milk" rule that I didn't know of.
The only other thing I can think of is that it had something to do with my honey. It's pomegranate infused, so maybe there was some acidity to it that made the milk go "NOPE." |
Pomegranate will def do that. It doesn't take much acidity in tea for the milk to curdle like that. Yuck!
On a positive note, your honey is legit if it retained enough actual pomegranate to curdle milk! ;D |

Mystery solved, though! Next time I guess I'll use my rock sugar if I want to add milk... Keep the honey for the fruit teas. |
For chai lattes, I would just add frothed milk, in whatever % you'd like. Frothers can be pretty cheap online, like 19-20$?

I like milk in my Chai, unless it's a roobios Chai. Then the peppery flavor is perfect without adding anything.

Though you already found out why I was going to say Citrus and Dairy are a bad combo. And milk in chai... only as a latte please, though I'm a weirdo, I'll only sweeten my teas with sugar or honey. Milk or cream are for coffee only IMHO |
Oh, man, this reminds me of the time I got a latte and asked for pomegranate flavoring in it... I love pomegranate but not curdled milk.
I do like milk in my hot tea. And just enough sugar to bring the flavor out unless it's one of those herbal zingers or otherwise has a strong enough flavor to be noticeable without being too bitter. But then I learned to drink hot tea in Alabama. |

unless I'm mistaken chai tea has citrus in it. That would definitely account for the curdling. Most herbal teas are to be drunk black, only regular bland tasting tras or teas with strong flavour would need milk in them, though sugar to taste is always welcome. Hope this helps
