With the heat the we had all last week in our area, I was all about making things that didn't even require cooking. Like tuna with a bit of olive oil and white wine vinegar along with Italian Seasonings. I also made some great salads, especially cucumber. I'd peel and dice it up and then make the dressing in a separate bowl. About 2 tablespoons of mayo, a little more white wine vinegar to thin it out some, some minced garlic (I used the jarred variety as I'm too lazy to mince the garlic myself, plus your hands get sticky after you smoosh them to get the skins off.), Italian seasoning (I use Mrs. Dash, it is low in sodium and tastes great!), a pinch of salt and a pinch of pepper. Mix that all up and pour over diced cucumber. I sometimes even use tomato in it, and sometimes I even throw in some fresh basil. There are other times I also get some very thinly sliced beef, cook it for about 2 or 3 minutes on my George Foreman and then use the cucumber as a topping on it. It's also great in sandwiches.

Cheese quesadillas are also wonderful and quick and you can experiment with what you put in them. Just buy shredded cheddar and some tortillas and whatever else you would like (I also recommend buying salsa and fresh cilantro, if you like it) and you can pop them in the microwave for about 2 or 3 minutes. VOILA! hehehe
