Yeah, possibly a chicken helper or something. Neat idea in theory, but they can't even make their food look appetizing on the box.

I can't help but agree. The last skillet meal I tried was Annie's, as they make a gluten-free Alfredo version. It was definitely better than any other boxed meal, but it still had that twang of processed food to it. Still, we had it with a huge side salad, and it is helpful to have quick meals when in a pinch.

(Though tonight's quick meal was still homemade sauce I had made and frozen.. so it was far healthier.)

I have to admit to liking some of the boxed pasta and riced things. Those are usually intended as sides, but sometimes I'll just eat a whole pot of that. [lol] Or mix in some frozen veggies and call it a meal.

We have some boxed rice macaroni and cheese in the pantry. We use it as sides usually, but like you... sometimes it's a meal. XD

Oh, mac n' cheese is always definitely a meal for me. It's too good to only eat a little of. It's really hard for me to not eat the whole pot, but I always get sick when I do. I'm such a responsible adult, eating too much mac n' cheese and getting sick. [ninja]

If you usually use margarine for it, try real butter sometime. It makes it 10x better somehow. [drool] Mmmm, fat.

I prefer margarine for most things because it just has more flavor for me. Popcorn, bread, vegetables, I use margarine on that. But one time we were out, so I used butter for my mac n' cheese and holy christ on a cracker [drool].

You know what sounds awesome? Popcorn with butter and caramel drizzled over it then folded into the marshmallowy goodness that turns them into popcorn balls! [drool] I'm watching movies right now.

I'm so proud. I made that enchilada sauce from the recipe, used it last night and put the rest in the jar to keep in the fridge.

I need to make a grocery list utilizing what's in our pantry. I'm being lazy! I'm thinking I'll do a stir-fry at some point, as we have some ginger paste that's begging to be used. I want to keep our grocery purchases at a minimum (produce being the major cost) because we might be moving in a couple months. The kitchen is always the worst to pack. xD

Here's the recipe: Red Enchilada Sauce {from Scratch} - Cooking Classy

She uses hot chilli powder in addition to cayenne pepper - I skipped the cayenne and used mild chilli powder and thought it was the right hotness.
Definitely taste it to see how it is, but even if it's a bit too spicy that probably won't matter by the time you've cooked it into a dish and added other ingredients and topped it with sour cream (or whatever).

My pain is that delicious orange cheddar popcorn. My grandparents gave me a triple tub (1/3 caramel, orange cheddar, and white cheddar) every christmas when I was little.

I thought about making mac and cheese tonight, but there's some leftover pasta Caesar salad that I made last night. It should be used up tonight, otherwise I imagine the lettuce would be too wilted. Steak will go with that! I think I mentioned a while back how my family and I typically buy bulk beef from a local source. That came in this week. :D Nom!
