A potato jacket is a baked potato that you cut open and stuff with like cheese, chives, sour cream bacon bits and such then put it back in to bake. SOme call it a twice baked potato. :) And yeah my grilled chicken salads rock. >.< lol

A "carb minimal" diet actually...I eat the carbs with high fiber, like brown rice, or sweet potatoes...But at the moment, I picked up some weight from being in a cast all summer...and now am trying to get rid of it! It's never easy...but I just want to wear my own pants comfortably.
