Nana's Famous Sweet Potato Casserole. So it would be a dessert or side dish.

I can't wait to see it. You always have good avatars.

'Ello!

Mm... Now you two got me hankering for blueberry muffins (and that doesn't take much, they are one of my favorite foods. XP )

PaintTheSkyRed 12-06-2009 08:26 PM

Awe thank you, I hope it looks good as you think it will. xD

AlbaRosaria 12-11-2009 04:11 PM

They turned out fine. I have difficulty with my oven because it is old and has been incessantly used since I can remember. To put it simply: The appliance is near death. It's heat fluctuates constantly so I can't go by the time listed in recipes, I have to watch said item for when it is done. For the stove top of it, it take about an hour for a single pot of water to boil on the best burner. This makes cooking very interesting.

Do any of you perhaps have a recipe for Potater-er... Potato Croquets? I love those things.

Here is a good tasting recipe from a book called " The County Innkeeper's Cookbook."

Quote:

Scottish Oatmeal Scones

Must be served warm. Very good with strawberry or raspberry jam.

1 1/4 cups shifted all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup shortening
1/4 cup butter
1 up quick-cooking oats
1/4 cup raisins or currants
1/3 cup milk
1 tablespoon melted butter

Sift together the flour, sugar, baking powder and salt into a bowl. Cut in the shortening and butter until the mixture resembles course crumbs. Mix in the oats and raisins or currants. Add the milk, mixing just until the dry ingredients are moistened.

Turn the dough out on to a lightly floured surface; knead gently five or six times. Roll to form a 7 - inch circle. Brush the top of the dough with the melted butter. Cut into six pie-shaped wedges. Bake on an ungreased cookie sheet in a preheated 375 degree oven for about 15 minutes or until lightly browned.

Makes six scones.

I could make those! I have all of those ingredients... save for the raisins XD
Well, I'm going to the store tomorrow anyway (for a "pre-employment survey"... I think that's supposed to be the not-intimidating name for interview o.O; ) so I shall try to make them the day after tomorrow. :crosses fingers:

Note: PaintTheSkyRed has kindly submitted recipes for her homemade jams. They can be found in the Condiments and Beverages section on the first page. :)

AlbaRosaria 12-14-2009 04:48 AM

Mom made this years ago and it was very good. I don't have everything to cook it, but I will more than likely leave out the raisins. Inherited that from mom: Tweaking recipes to suit our taste more. XP

Ooo... Homemade jam... That would go with them perfectly!

Oooh, those sound wonderful! I may have to try this recipe (I'm not much of a baker though)

xnozomichanx 12-15-2009 03:59 AM

:sighs: I was going to make the scones tonight so I could distract myself enough to calm down (cooking is systematic and therefor therapeutic for me/it was a bad night)
So I went to make the scones, I had measured out and mixed all the dry ingredients together, and went to grab the butter (we always have butter), and there was none. Not one tablespoon.
SO, I will make them tomorrow night so everyone can have them for breakfast the day after tomorrow, because I am not using margarine. >:|

rawr

I like the sound of the scones and thanks Nozomi for the advertising my jam. x3 I felt special.

You're welcome ^^

I made the scones, and they were good,(used raisins and dried cranberries, yum) but I found them to be a little dry, so I'm probably going to add either a little more butter or cook them for a shorter period, probably the latter. :) oh and I'm adding more raisins and cranberries, simply because they taste so damn good =3

PaintTheSkyRed 12-19-2009 12:37 AM

I would actually suggest sweetened milk, like Eagle Brand. It might make the scones a little lest dry or add Vanilla extract for more flavoring. (Just a hint.) c:

o.O;? how would sweetened milk make them less dry? (You do mean replace the regular milk with the sweetened milk, right?) Sorry. I'm pretty new when it comes to cooking. I've cooked some really basic stuff before, but it's only been this year that I'm actually interested in food, making it and collecting recipes :)

PaintTheSkyRed 12-20-2009 03:03 PM

Yes, replace regular with sweetented. And the vanilla extract will just give it a nice sweet but not overpowering flavor. I got into baking a lot last year when I first made jam, then cupcakes a lot. I like making jam, I am going to be making some on tuesday. c: And I like making cake, though I hate the taste of it. Lol

Lol. I usually don't hate cake, but I'm not a super huge fan. I'm neutral ^^ Though I could go for a chocolate chip cookie right now. >> but i've been making them a lot and too many won't exactly be beneficial to my health  but I do love them so

PaintTheSkyRed 12-21-2009 03:18 AM

I had a sundae. Yummmmmm. And I hate cake. Hate the taste. Lol my fave is a cheesecake with strawberries though.
