I remember the best piece of Carrot Cake that I've ever eaten was on Inis Mor off the coast of Ireland. OMG! :drool: IT WAS SOOOOOOOOOOOOO Good!

I don't recall the best carrot cake I've ever eaten. But as a general rule, it should have home made cream cheese frosting! I'm not as concerned about the cake mix, as long as the frosting is made with real cream cheese and sugar!

@Hopeless - I don't like canned frosting. It's icky. Well, unless it's chocolate. I can deal with canned chocolate frosting, but for anything else, I prefer to make my own frosting. Especially cream cheese frosting! Canned cream cheese frosting is a joke. A nasty joke.

@Hope~ I just got over a cold recently. It was a sinus infection... not fun. I can only imagine how you must feel. ~hands chicken noodle soup~

@Hopeless - Homemade white chocolate frosting! :drool: My mom has this recipe for a coconut cake filled with pineapple curd and covered in white chocolate frosting and toasted coconut. It's soooooooooo gooooooooooooood! OMG!

Cookie: OMG! That sounds AMAZING!! :drool: How I wish that I had a decent oven to cook a cake here at Uni with me! So taking over mum's kitchen when I go home next and making a cake. :P

Eh, it's not getting me down too much, just making me work harder at actually making myself get up and doing things.

Cookie: Oh, I bet! Mum makes a really good apple cake which takes ages as you have to dice up about 4 1/2 cups of apples, which takes longer than it sounds like. :P But It's so worth it!
