Well the human baby was usually taken to be a servant to the fairy folk. Though the reasoning vary from place to place, story to story. There's another version where the fairy being left behind is an elderly fairy so that it can be taken care by human. (Rarer stories suggest it was done to prevent inbreeding for the fairy folk).

Human babies with gold hair were supposedly frequent targets and there are a whole list of countermeasures that be done. (The harsh reality implications though say a completely different story) *shrugs*

Well unlike modern day media, they were exactly the nicest creatures to be around. Sure there were good fairies, but there were bad ones too xD
