This is adapted from my mom's recipe for chicken.
Spicy and Sweet Tofu
1/2 lb firm tofu (one-half of a one-pound package)
1 package (1 oz) taco seasoning
1/4 cup vegetable oil
3/4 cup medium to hot salsa
1/2 cup peach or apricot preserves or jam
The firm tofu I buy comes in four chunks to a one-pound package. This recipe uses two of those chunks. Slice the tofu into thin planks, then slice the planks into strips and cut those in half. Sprinkle the taco seasoning all over the tofu pieces and toss to cover them completely.
Heat the oil in a non-stick pan on medium high heat (7 on a range of 0 -10) When the oil is hot (30-45 seconds), stir-fry the coated tofu for 5-6 minutes. Pour the salsa on top of the tofu and stir to combine. Reduce heat to simmer (3 on a scale of 0-10). Add the preserves and stir to combine, then simmer 10-15 minutes. Serve over plain white rice.
