I did this one this past Christmas as a snack for everyone.

take a package for crescent rolls and leave it rolled up. cut the log into about quarter inch slices, I arranged them in the shape of a tree, and arrange them in some kind of shape (circle, square doesn't really matter). bake according to the baking directions. once they're done baking remove and place on a serving platter. let cool for at least 5 minutes, the original recipe called for half of a cream cheese (or about 3oz) and herb (thyme, dried green onion) topping but I ended up using onion dip (people get so cranky when they have to wait for snacks). spread the topping over the crescent disks and sprinkle about 1 quarter of a red and yellow pepper that have been cut into 1 inch long thin strips and broccoli buds. each disk breaks off and is bit size :P depending on the size of the mouth.

I also do a semi homemade pigs in a blanket that I haven't tried veggi friendly...they go really quick

Alrighty, here it is! Again, this is a very versatile one. Aside from the basic skeleton of it, I just throw in whatever vegetables I have on hand to mix it up.

Prepare rice or barley according to the directions on package, but substitute water with the vegetable broth and add the margarine. If the rice or barley calls for more water than there is vegetable broth in the can, then add water to the measurement required.
Heat olive oil in a large pan and sautee all vegetables except green beans for a few minutes. Until they look slightly cooked. Add green beans and let cook for a moment.
Turn heat down to low and stir in rice. Add cream of [vegetable], and fill the can about 1/3 of the way up with milk, stir in. Sprinkle very generously with poultry seasoning, normally with garlic powder, and lightly with pepper. If the mixture is pasty and difficult to stir, add more milk and let sit for a few minutes. If it is very runny, allow to sit covered on a low setting for a 5-10 minutes. It should be a tiny bit loose because refrigerating and reheating it will dry it out some and this makes quite a few leftovers. After allowing it to sit, taste and add more spices if necessary. The flavor of the poultry seasoning should be apparent.


* Do not use Campbell's Cream of Celery! It has chicken stock in it! Campbells cream of mushroom and cream of onion are both safe, as I recall, and some other brands of cream of celery are too. I recommend cream of celery the highest for this, but any of the three are fine. Or any other cream of vegetable you happen to have.
** Tasty, but not crucial if you don't have it. Add whatever you want.
*** Absolutely crucial to the flavoring. McCormick poultry seasoning, it comes in one of those little tiny shakers. You can get it at walmart. It is absolutely crucial to this meal. You won't regret the purchase, it's the best spice mix ever.

if it is too think i can add some vegtable broth i guess.
lol and i'm sure it won't be the last thing i ever make that is a little too thick or salty or dry.....

Add milk if it's too thick, that works best for the flavor, I find. :)

Yeah, recipes like this are excellent for that! And the best part is that as long as the veggie tastes good in it (and it probably will), it doesn't even feel like you're just trying to eat up your leftovers, it feels like a proper meal. :D

that's very true.
the mexican grocery i go to has really great sales on veggies, like sometimes ten for a dollar ;p .
but just eating them by themselves makes it hard to use up before they start to go bad.
so this is just perfect for me and i would never have thought to do it this way.
plus if it makes too much then i can freeze that in smaller portions to use for lunch.

Yeah, this one makes a good deal of leftovers. I just stick it in the fridge and then have the leftovers every night and then don't have to cook for a few days!

yeah it's a great store.
they use local farmers produce and when it's ten plum tomatoes for one little old dollar i am in heaven!
they do cucumbers and peppers and corn this way a lot.
it just depends what they get from the farmers.
they seem to really try to help struggling families along with making a profit of course.
but there are some weeks i only spend about thrity dollars for food O.o i love this store!

oh yes and i love it with soy sauce basted on it.
and grill them sweet potatoes too!

the store isn't right by me but it's close enough to make it do-able each week with their coupons.
while they were trying to get a good following they had orange juice for ninety-nine cents.
now that they don't have to beg people to shop there it's back up to a dollar ninety-nine.
but i loved the less than a dollar stuff so much.
since the produce comes from close by farms it's really fresh and such a bargain.

Hey guys! I'm back from road trippin with the fam. ^-^ I had some amazing food. It was basically a mini-reunion of my mom's aunt's kids and their kids that we crash every year and you can see where we get our taste in food on.
Also, I feel I should note that I was tackled by four tiny gremlins several times (including one that sat on my head with a very smelly diper. Not. Fun.) lol but they're cute most of the time.
So the first day was a shrimp boil. The second day was fajitas and since I didn't want to eat fajita meat, we grilled up some of the left over shrimp! How resourceful, right? It took a couple tries to get all the flavors right but they were tasty. Also, great appetizer: french bread + apricot preserves + brie + pine nuts, toasted. :)
