It was my computer glitching, which was so weird. I wonder if that happened to anyone else. I wouldn't show any new posts and even when I posted a response in here, it didn't show up. And for a bit there, I had to keep refreshing because it kept going back to my old gold amount before my last post and showed none of the new posts.
Don't you just love glitches? I think my little one's starting to stir. Her naps are getting shorter and shorter every day, it seems! O_O |

Kaenai - I thought growth spurts meant they slept longer! lol. Ah well, she is almost 18 months old and I heard as they get a bit older, the naps start kind of going away! |

Oh boy - I showed my friend the poncho I finished making for myself and now I have a commission!
She's going to come over tonight and we're going to run to a craft store to pick out her colors - looks like I have a project to work on - hopefully I get it done before it's too warm for her to wear it!! |

We just responded on a house fire and ended up transporting an elderly couple with smoke inhalation. Nothing serious thank goodness, but the house is a total loss. I don't know about you all, but a house fire is one of my biggest fears... Especially it happening while I'm at work and the kitties are home alone. Everytime we get called out for one, it makes me worry. |
Anything having to do with fire scares me. When I was 6 a friend and I were playing in the desert in our fort and well... we burned part of the desert down. We got this huge lecture from the fire marshall and I never played with matches again.
I'm always afraid that a fire will start when I am sleeping. Once I'm out, I'm out and there is no waking me up. I don't know if the fire alarm would be loud enough. |

I'm going to try another new recipe for dinner: a cheesy broccoli chicken with white rice. I'm defrosting the chicken now! |

My hometown (where I live again now) had a huge fire in 99 or 2000 while I was living in Albuquerque, and 40+ homes burned to the ground. A controller burn in the nearby mountains got out of control during the wind, and it was pretty devastating and emotional; everybody knew someone who lost their house and all their things! It really brought the town together though, and people felt this closeness and bonding through tragedy that I'd never felt before.

Here is the recipe although I don't make the mango salsa (it's a little too weird for me) but I generally cook up some asparagus or broccoli or something for a side. I also don't grill it. I bake it at 350 for about 45 minutes or so. You can also use chicken breast if you aren't real fond of thighs. I love it. You can also play with the spices so it can be as spicy or as sweet as you like:
Jerk Chicken Thighs with Mango Salsa Ingredients 3/4 tsp ground cinnamon 3/4 tsp ground allspice 1/2 tsp garlic salt 1/4 tsp dried thyme 1/4 tsp table salt 1/4 tsp black pepper 1/8 tsp cayenne pepper, or to taste 2 Tbsp fresh lime juice, divided 1 pound boneless, skinless chicken thigh(s), about 6 thighs 1 large mango(es), diced 2 small shallot(s), finely chopped 1 large jalapeno pepper(s), cored, seeded and minced (do not touch seeds with bare hands) 1 Tbsp cilantro, fresh, minced 1/8 tsp table salt, or to taste Instructions Preheat grill to medium heat. Combine cinnamon, allspice, garlic salt, thyme, 1/4 teaspoon of salt, black pepper, cayenne pepper and 1 tablespoon of lime juice on a plate; mix to a paste. Brush both sides of chicken with seasoning paste; set aside for 10 minutes to allow flavors to blend. Meanwhile, combine mango, shallot, jalapeno, cilantro, remaining tablespoon of lime juice and 1/8 teaspoon of salt in a bowl. Place chicken on preheated grill. Grill for 10 minutes; flip and grill until cooked through, about 6 minutes more. Cut each chicken thigh in half to serve. Yields 3 pieces of chicken (1 1/2 thighs total) and about 1/2 cup of salsa per serving. |
