But I tend to skip breakfast anyway. So I guess it'd have to be either lunch of afternoon tea-something for me to ever be able to have waffles/pancakes. > A>;;

225g/8oz butter or margarine, softened at room temperature

Preparation method
Preheat the oven to 180C/350F/Gas 4.
Grease and line 2 x 18cm/7in cake tins with baking paper.
Technique: Greasing and lining cake tins

Cream the butter and the sugar together in a bowl until pale and fluffy.
Technique: Creaming butter by hand

Beat in the eggs, a little at a time, and stir in the vanilla extract.
Fold in the flour using a large metal spoon, adding a little extra milk if necessary, to create a batter with a soft dropping consistency.

Divide the mixture between the cake tins and gently spread out with a spatula.
Bake for 20-25 minutes, or until golden-brown on top and a skewer inserted into the middle comes out clean.
Remove from the oven and set aside for 5 minutes, then remove from the tin and peel off the paper. Place onto a wire rack.
Sandwich the cakes together with jam, lemon curd or whipped cream and berries or just enjoy on its own.
Rock Cakes

1 tsp double action baking powder (US) or 1 tsp baking powder (UK)

2 oz/ 55g granulated sugar
4 0z/ 110g mixed dried fruit
2 oz/ 55g currants

1 - 3 tbsp milk
Demerara sugar for sprinkling
Oil for greasing
Preparation:

Heat the oven to 400F/200C/Gas 6
Sieve the flour and baking powder into a large baking bowl, add the softened butter or margarine, and lightly rub together with fingertips until the mixture resembles fine breadcrumbs.
Add the sugar and the dried fruit and mix so all ingredients are well incorporated.
Add the egg and 1 tbsp of the milk and mix to create a stiff dough. If the mixture is still dry add milk a tbsp at a time until required consistency.
Lightly grease two baking sheets.
Using a tablespoon divide the mixture into 12 mounds evenly spaced on the 2 baking sheets. Sprinkle with the demerara sugar.
Bake in the preheated oven for 15 mins or until golden brown and well risen.
