I guess my parents just aren't good cooks...I feel mean saying that with my mom in the same room.

Hubby has the electrical mostly done now... (under cabinet lights).

Haha. My mom is a great cook. I love her food, and not to be conceited but I think I'm fairly good myself.

Mexican Cornbread is a casserole that has sweet cornbread for the top and bottom. In the middle you mix ground beef, picante, cheese, corn, sauteed onions (i think that's it). Then you bake it and put ranch style beans over it when you eat it.
