Everyone has them right? The manga you LOVE TO DEATH, that, for some reason beyond your concern, hasn't gotten animated. (Or, if it has, it's barely worth mentioning in comparison to the awesome of the manga. )
My personal biggie is Red River/ Anatolia Story.
I just don't get why not. I've read 10 + volumes, and it's a wonderful series that seems to be pretty darn popular. But, for some reason, no one's picked it up.
Others:
Genjuu no Seiza
Diablo
Innocent W
Demon Diary
(( A lot of the stuff I'd like to see get animated is technically manwha, but... ._.;; ))
~~~
My first "If only it were as good" is PetShop of Horrors.
It got some OVAs, but... Well... They're a dull gray, if you've read the manga.
Others that could've been done SO MUCH BETTER:
Sgt. Frog
(The anime is good, but the manga is SO much better.)
Shaman King
~~~
What are some of yours?
EDIT: Made what I meant more obvious. Sorry to confuse.

It would be cool if some of Erica Sakurazawa's manga were made into an OVA series. But I doubt that will happen.

I would also like to see Midnight Secretary as an anime.

I think Shaman King was an anime at one point.

There are more manga I think that should have an anime or OVA, but I can't think of the titles right now.

What about Legal Drug, do you guys think it would be a good OVA?

Yep, Shaman King is already an anime. Though I'm not sure if it's in english. I've only seen it in the original Japanese with subtitles.

Um I'm not really sure because I don't keep up with the differences. Though there is an American written "manga" that I really liked. It's called Polly and the Pirates and it's very good :) Though it is also very short, only one volume so I'm not sure how they would make an anime out of that.

i wish that they would make another set of fruits basket since the series is 23 volumes long and the anime was only 26 episodes and covered only the first 8 books... i love that series... so cute!

I know Speed Grapher is already an anime, but I wish the manga version was an OVA. Now that would be so awesome. The manga is totally different from the anime and I wish they published the final volume in the US.

@nette

I Think Shaman King was dubbed, but it was a poorly done dub by 4Kids (if I can remember right).

You guys are all correct. I should have made myself a little clearer.
The first set of manga I listed are things that I thought needed an anime. The SECOND SET is stuff that's ALREADY BEEN ANIMATED, but could have, in my opinion, been done much better.
(Most of those are because the manga wasn't far enough when they started the anime, or because they animated it for a younger audience. )

Shaman King did, in fact, come over here, but as Lizzy said, it got a 4kids dub, so does it really count?
xD

@ Lizzy - I think Legal Drug would make a great OVA. Maybe now that CLAMP has finished with Tsubasa Reservoir Chronicle, they'll go back to it. It's already at least been in a tiny spot of animation. It's animated for a tiny snippet in Clamp In Wonderland 2. Have you seen it?

a series called From Eroica With Love...it's a semi shonen ai manga...it's pretty amusing. It's a one sided love xD

The art is really nice, so it's really fun. It's been being written since...the mid to late 70's I think, and I'm not entirely sure, but I think it's still being written, I'm not sure though. It's been going on for quite a while. But the whole idea behind it is really cool. I don't think I've ever heard of a manga that's based off of the Cold War era in Europe...and it deals with quite a few of the social issues of the time period over in Europe...though it's not entirely accurate because I don't think the Japanese had a true understanding of what had been going on in Europe at that time. It's a really good idea though. I suggest anyone who likes Slash to read the manga.

oh wow...lol I got off topic there. But yeah, I'd love to see it as an anime if they stayed true to the art of the manga (which is really pretty <3) and they stayed true to how the characters are portrayed in the manga, it could be really good.

@Fanta
No, I did not know that and I haven't seen Clamp in Wonderland 2. I'll put that in my to watch list along with the first Clamp in Wonderland.

The Clamp in Wonderland shorts are more like promo videos for CLAMP. Like... a video resume, maybe? They're both pretty easy to find. Just hop on Youtube for a few minutes, and you can shorten your "To Watch" list by two. xD

I wish for #1 to have the manga Highschool of the Dead brought off hiatus and resumed as soon as possible and #2 for that to become an anime, in particular an OVA. That would rock!

Oh, I just thought of a manga that should have an anime series or OVA. That manga title is Real. I think Real would make a great OVA series or a decent anime series.

For those who don't know what Real is about, Real is about this guy that causes an car accident and the girl that was in the accident ends up in a wheelchair. But the manga is basically is about wheelchair basketball (in Japan) and it focuses on the lives of some of the players. The manga lives up to its title.

If Real is already an Anime or OVA series, then point me to where I can find it. Thanks! :)

A good friend of mine like Mars, and I've read a little. I'm sure she agrees with you on that.

Nurarihyon no Mago
Demons and magic and all that good stuff. Makes good entertainment even if the stories a bit jumpy.
Mysterious Girlfriend X
Style reminds me of Dragonball...but that's not really why. Panty scissors in action!

I would too... I've read most of the mangas said for the last three (I'm in denial that this is the end :/ ) I heard some people weren't happy with the anime series. Besides that it was short but also they left some characters out..um how does that work when you kind of need all of the members of the zodiac to make a complete story?

I really wish Absolute Boyfriend was an anime. I really loved reading the manga and I think it'd make a nice, short series.

Eloise, have you seen the Live Action drama tv series for Absolute Boyfreind / Zettai Kareshi? It was awesome. XD

There's a manga I just started reading, Dolls - I dont' THINK there's an anime for that yet. If they make one I hope they wait long enough for the story to build up so they don't have to start improvising and doing like they did with FMA.

@Ketsuri666: i can totally see why one might get a little confused after watching the fruits basket anime because nothing is really resolved, thus making the series just a story with no ending... the only reason i would think it was done that way is because they were going to make more... but it's been how long now? and still nothing?

@nette: i started reading the manga before i saw the anime... so i kind of knew what to expect... i was really disappointed that the anime ended like it did, but i guess i wasn't too sad because i knew i'd get all the answers i was missing upon finishing the manga...

and on another note, 'midnight secretary' was deliciously racy and i think it'd make a great anime! ;)
