Tonight I made Enchiladas for dinner! Here's how!

Ingredients -
1 lb ground beef or 1 lb chicken
1 large can Old El Paso Enchilada sauce
1 can Refried beans
2 bags of grated cheese (Mexican or taco style works best)
8 flour tortillas

- Preheat oven to 350 degrees.
- Slice your chicken or break up the ground beef, brown over medium heat.
- Add 1/3 can of Enchilada sauce, cover and simmer for 2 minutes.
- Add can of Refried Beans, stir until everything mixes, remove from heat.
- Place a layer of cheese, then meat and bean mixture, then more cheese in tortilla. Fold closed and place overlapping sides down in glass lasagna pan. Repeat until pan is full.
- Spread any remaining meat & bean mixture on top of tortillas in pan. Cover with remaining enchilada sauce, COVER WITH CHEESE. Seriously, use a whole bag of the stuff.
- Place in oven for approx 10 minutes or until cheese is melted.
- Serve and enjoy!

(Next time I'm mixing in rice too). I said serves 4 - 6 because it depends on how big tortillas you get or how big your pan is. Tonight we had MASSIVE enchiladas as I only had 4 tortillas left from whatever so I had to LOAD them with all the stuff.

In and out burgers?? I have no clue what those are... EDUCATE ME!!

^ ^ It's a chain on the west coast. The burgers remind me more of MacDonald's burgers, but more of how Macdonalds used to be looooong ago. They add more goodies, and oh yea ^ ^ They have a secret menu that you'll never know about unless someone tells you what the items on it are xD
