I saw a recipe from Gordon Ramsey that basically packed like a three inch coat of salt on a pineapple and baked it.

Yum, pineapple! I love this fruit, but can't eat too much of it, much like Emilio. But in my case, my stomach starts feeling weird after a few pieces.
