I keep two sets, 1 for me and one for my mule.

I think I'd rather save my gold and have my seeds for tickets to buy event commons rather than getting more of the profession items. I might get one of every one, but I'm not going to get extras.

i think one more profession set so I have 2 spare sets is the max.
