For the nobleman - he could hire her to write a biography on his life or something, but instead she takes what information he has given her and turns it into a story~
Then when he's the king - she could be the book keeper of the palace~
How about the writer (Sarah) is a hopeless romantic like she is in the movie, and has certain powers she doesn't know about, also like in the movie? And that's why she rewrites the noble's (Jareth's) life to suit herself, and that's why they get transported into the book?
In this story, an intelligent prophet is fixed up with a mean-spirited noble. What starts as a professional relationship quickly becomes love - all thanks to someone writing a book. Yet, how can a keepsake tear them apart?
The theme of this story: epic romance. The main character: laid-back king. The major event of the story: journey.
Perhaps they can write a book together and then somehow get transferred into the book and live out the tail themselves!
Like, he starts out as a noble, then goes to be the king~

Sarah wakes up as night is falling; oh no! She is going to be late delivering Jareth his story! She runs around in a frenzy, getting dressed in her best clothes and grabs one of the packaged manuscripts, not bothering to look at which one it is.
She rushes to Jareth’s mansion and hands over the manuscript. The noble opens the package, looks over the front page…
“Hmm. ‘King Jareth’? My life seems to have taken a turn for the better.”
He lowers the page from his eyes to find that he is in the very castle that Sarah describes, with Sarah there along with him. He is now the ruler over a kingdom of goblins, and the tricky master of the Labyrinth itself.
However, hours after working away at a manuscript that she’s ready to slit her wrists over, inspiration strikes. She can make Jareth’s life-story more interesting… By completely changing it. Newly inspired, she finishes up the draft of Jareth’s original life, and starts on writing a new, fictional account of his life that never happened.
She finishes the story just as the sun starts to rise; exhausted but pleased with herself, she falls asleep at her writing desk.
Jareth is a lower-class noble with few prospects in the world, other than his title and the little wealth that he can call his own. Fed up with his position and bored with life in general, he decides to call in one of the residents of the town he presides over; a writer named Sarah who has already garnered a bit of a name for herself through her stories.
Jareth tells her about his life, instructs her to write it down and “make it sound more interesting than it actually is,” then sends her away. Alone in her small apartment, Sarah is at first stuck at how to make Jareth’s life sound interesting, because… It is not. It’s as boring as a life can possibly be.
