Yes, this cream cheese frosting is particularly deadly. It's two things of cream cheese and a stick of butter just whipped for forever until it's fluffy and it only has a little sugar in it, just two cups. It's so good though! I really should get into the kitchen to start the cupcakes. I'm stalling! |

I've never heard of using pumpkin for a kind of cake.. it sounds really cool. Doesn't pumpkin taste a bit bitter though?

Not bitter at all. Pumpkin is delicious. It's quite similar to sweet potato in flavor and texture and you use similar spices in it, like cinnamon and ginger. It's delicious.

I do like cinnamon! I don't think I've actually ever tasted pumpkin. I eat butternut squash which is probably quite similar, and I also eat sweet potato. I was interested in the Starbucks' latte: Pumpkin Spiced Latte, but I haven't tried it. I saw online that some people found it bitter tasting.

I think if you baked your own pumpkin, that might happen. Not all pumpkins are ideal for baking. Here in the states, we have a company, Libby's, that makes already cooked and mashed pumpkin. It's a blend of pumpkin ideal for eating. So it's super easy to pop open a can and bake with it. I hear that in Australia, they don't have canned pumpkin, so they have to bake their pumpkins and mash it up themselves. But like I said, not every pumpkin is ideal for eating. The decorative pumpkins probably don't taste very good.

Ah I get you. That makes sense, especially since there are so many churned out for Halloween. If they were all perfect for eating maybe we are best using it for our meal instead of cutting holes in it! [lol] I guess it's like apples, too. We had an apple tree in our garden, but they were cooking apples, you wouldn't ever think of eating it raw.
