According to the Wikipedia entry, the chicken lived due to a combination of a very particular severing, and a blood clod that prevented it from bleeding to death.
Having grown up near people with Chickens, I'm assuming the story is true simply from experience- Chickens aren't exactly the most complex of creatures.

I seriously wouldn't know what to do. I'd spend a minute just trying to figure out if I should defend myself, if I should run, or if I should look around for more zombies.. either way, I'd beat it with a chair if it started coming at me.. unless it was like, a headless bear. Then I'd run very far, very fast.

Seeing the stuff for it at the Ripley's Museum in Ocean City always made me cringe. And the only other thing that could was the shark exhibit.
