Choc and orange cupcakes, hand typed for you:
Choc & Orange Cup Cakes Ingredients: 60g (2oz) milk chocolate 1 teaspoon orange rind 155ml (5 fl oz) orange juice 90g (4oz) butter softened 225g (8oz) brown sugar 2 eggs 80g (3 ½ oz) self-raising flour 2 tablespoons cocoa powder 30g (1oz) ground almonds (^Optional, you can use extra flour/cocoa powder instead) For the topping: 150g (5oz) butter –softened 250g (9oz) icing sugar 2 tablespoons cocoa powder 2 teaspoons hot water Coloured sprinkles (optional) Preheat the oven to 175˚c/ 340˚F/ gas mark 4 1) Put the paper cases in the bun tin. 2) Place the chocolate, orange rind and orange juice in a small saucepan. Stir over a low heat until melted and smooth. Leave to cool slightly. 3) Put the softened butter, sugar and eggs in a bowl and beat with an electric whisk (or manually) until light and fluffy 4) Sift the flour and cocoa into the butter mixture. Add the ground almonds and chocolate mixture. Mix until just combined. 5) Use a teaspoon to transfer equal amounts of the mixture to the paper cases. Bake the cupcakes for about 25 minutes. Leave them to cool on a wire rack. 6) For the topping, beat together the butter and sugar. Combine the cocoa powder and water and add to the mixture. Beat until smooth and creamy. Swirl over the cupcakes adding a few sprinkles on the top to finish. |

Yeah, you sometimes use sour cream when you make cookies from scratch... or like... philly cream cheese. You think that it'd be gross but it's really not ^^

Chocolate Muffins Ingredients: 50g (2oz) butter 75g (30z) brown sugar 1 egg 100g (4oz) plain flour 2 teaspoons baking powder 90ml (3 fl oz) milk Preheat the over to 190°c/ 375°F/gas mark 5 1) Use a paper towel to grease the muffin tray with a little soft butter. 2) Put the butter sugar and egg in to a large mixing bowl. Sift in the flour. Stir the ingredients together with a wooden spoon until well mixed. 3) Sift the baking powder and cocoa powder into the bowl. Add the milk. Mix them together. 4) Use a teaspoon to divide the mixture equally in to the muffin tray. Bake the muffins for 12 minutes. 5) Leave the muffins in the tray until they are cool, and then decorate them with buttercream icing if you want to. |

LOL... I know.. You almost wouldn't want to eat them. I'm sure that you could make them look even cuter. Like the peeps. My mom had me thinking that they were real chicks when i was like 2 or 3 maybe. I wouldn't eat them for YEARS. She would make the little peep peep sounds and then pop them in her mouth. How cruel :cry:

here's another option:
Lemon Crystal Muffins Ingredients: 1 lemon 175g (6oz) self-raising flour 1 teaspoon baking powder 100g (4oz) soft margarine 100g (4oz) soft margarine 100g (4oz) caster sugar 2 eggs For the topping: 100g (4oz) Demerara sugar Juice of one lemon Preheat the oven to 200°c/ 390°F/ gas mark 6 1) Put the paper cases in the muffin baking tray. Grate the rind of the lemon. Cut the lemon in half and squeeze the juice in to a bowl. 2) Sift the flour and baking powder into a bowl. Add the margarine, sugar, eggs and grated lemon rind in to a bowl and mix everything together. 3) Spoon the mixture into paper cases and bake the muffins for 12-15 minutes until they are golden brown. 4) While the muffins are cooking, make the topping by putting Demerara sugar into the bowl with the lemon juice. Mix them will together 5) When the muffins are cooked, put them on to a wire rack (or a plate) While they are still warm, spoon a little of the topping over each one. Leave them to cool. ---------- or something festive: Cranberry Orange Muffins Ingredients: 250g (9oz) plain flour 150g (5oz) sugar 1 tablespoon baking powder 1 egg 175ml (6 fl oz) milk 3 tablespoons vegetable oil 80g (1oz) chopped cranberries 2 tablespoons grated orange peel 2 tablespoons chopped pecans or walnuts Preheat the oven to 230°c/ 445°F/ gas mark 8 1) Put the paper cases in the muffin tray 2) Sift the flour, sugar and baking powder into a bowl. Mix them together. 3) Add in the egg milk and vegetable oil and mix until all the flour is moistened. 4) Fold in the cranberries orange peel and nuts. 5) Use a teaspoon to transfer equal amounts of the mixture to the paper cases. Bake the muffins for 20 minutes or until they are well risen and golden brown. Leave them to cool on a wire rack. |

I have a hard time eating peeps because they are cute! But I only eat the chicks ones...because they're normal...and I've never tried to chocolate covered ones...they just seem wrong...peeps weren't meant to be chocolate covered! |

Apple Spice Muffins Ingredients: 100g (4oz) butter 135g (5oz) sugar 2 eggs ½ teaspoon ground cinnamon ½ teaspoon ground allspice 2 teaspoons baking powder ½ teaspoon bicarbonate of soda 235ml (8 fl oz) apple sauce 190g (7oz) plain flour For the topping: 2 tablespoons water 120g (4oz) icing sugar Nuts of your choice Preheat the oven to 180°c/ 355°F/ gas mark 4 1) Use a paper towel to grease the muffin tray with a little soft butter. 2) In a large bowl mix together the butter and sugar until the mixture is creamy. 3) Add in the eggs and beat until smooth. Blend in the cinnamon, all spice, baking powder and bicarbonate of soda. 4) Add in the apple sauce and the flour. Stir until just blended together. 5) Use a teaspoon to divide the mixture equally into the muffin tray. Bake the muffins for 20 minutes. 6) When the muffins are cool, mix the icing sugar and water and spoon a little icing over each one. Top with a few nuts. |
