Where are you petting them? they might not feel comfortable if you are petting their side or ruffing up their fur...
I wasn't ruffling up their fur. And I was petting their back.

It's the movement, Falcon. Cats tend to act first, think later when they see things out of the corner of their eye. XD At least, every cat I know has done this-- unless they are REALLY socialized. But it could be considered a "love bite" if the cat bites you in "slow-mo".

Our cat would always play with you.
When she was done playing, she bit you.

It was just her way of saying "That's enough!"
