Ceres and Vesta are Roman. In Greek mythology, they were called Demeter and Hestia.

I'm very fond of mythology.

Vesta, goddess of the hearth. I'm fond of the history of the Vestal Virgins, the girls who guarded her eternal flame. Ceres, goddess of crops and harvest. The one who makes the earth lush and fertile. She stops in the winter, and there's a myth about why.

/and they matter in astrology

Eh. Demeter and Hestia aren't bad, but my favorite of the Greek/Roman deities are probably Athena/Minerva and Artemis/Diana. My least favorite is probably Hera/Juno.

I imagine Apollo being a lot more awesome than the stories say. I saw one drawing of him I liked, projected what I wanted him to be, ran with it, and can't stop now.

I am not surprised to see you say that.

Daphne, whose father turned her into a laurel tree because she so didn't want a man, not even the great Apollo… which is why he was fond of that tree's leaves and it was used in rituals involving him.
I believe he was shot by Cupid fulfilling Aphrodite's orders because she was mad about Daphne rejecting love. Even if there was no additional motivation, I don't think about it. He's still one of my favorites.
