I was curious to know the answer as well, without any sources.
There's more than one kind of rice, and a nice substitute is quinoa or couscous. I eat a lot of "sushi" in the wintertime when we don't have as many vegetables and fruits available. It's not the rolls with seaweed, rice, and fried cream cheese that everyone seems to be into. It's more just sashimi (raw fish) over a little bit of rice, if any at all. And hijiki seaweed.
