steel's suggestion just might work, but then there's extra moisture that you'd have to worry about as they defrost while you bake them. That extra moisture could totally ruin the structure of the cookie. This is making me want to experiment...
Though, the recipe that the blog I found your sig picture on had posted just has fresh ones, and they don't look all mushy...
