Car Crash Cupcakes

I was witness to a bizarre accident earlier today. It was out of this world! A small space ship came from no where collided into a family car. The family must have been on their way to a get together because from the passenger side window a tray of muffins pumpkin muffins came flying out... hmm waste not want not. right? Mmmm crunchy.

(actually they're pumpkin muffins grans recipe and Corn syrup blood and Candy glass with a bit of whip cream and butter frosting most of the recipe can be found here accept grans pumpkin muffins)

So, recipe. Rather a straight forward one.

I used

Filling;
1 pkg (8oz) cream cheese
1 egg
1 tsp vanilla extract
1 3/4 tsp pumpkin spice emulsion
1/2 tsp cinnamon
1/4 tsp nutmeg
1/3 cup sugar
*Optional* 1/3 cup sour cream

Crust;
1 TBSP stick butter
1/2 tsp vanilla
less than 1/4 cup of sugar
three "sheets" of graham crackers, crushed/pulverized.

preheat oven to 325 degrees F.

Blend cream cheese, sugar, vanilla, and the emulsion together till creamy, testing to see if the taste is to your preference. (Can also add sour cream in this step if you include sour cream. I made batches of both with and w/o) Then add in the egg.

Melt the butter and bowl into a bowl with the crushed cracker crumbs, sugar, and vanilla. Mix together. Grabbing a muffin pan and spray with Pam, or any other cooking spray you like. Gently use a paper towel to absorb the excess spray. Spoon in the crumb mixture and gently press down.

At this point, if you like and have the patience, you could bake the crust a little, maybe 5 or so minutes to help it set up, but I did not have the patience, so I poured in the batter and placed tray in the oven. About 8-10 minutes, or more. You want the batter to be firm, but still jiggly. Or just use a toothpick. If it comes out with a little bit of batter, its done. Frankly I know its done when the top cracks a little, which to some means its over-done, but not burned. Oh well.
