Do you know Gojyo and Hakkai's background story? They were actually friends a living together long before Sanzo brought the group together. It is also worth noting that the apartment they shared had only one bed ;-)
That said... maybe we could do something from before the group even got together? I think it would seem more realistic than them only getting to know each other years later, you know? Or maybe we could even do like you said with the group being separated, but something happens to one of them that causes them to realize their feelings for each other after all their years of friendship. We could even flesh it out a bit with flashbacks to when they were living together.
