In this case, yoyomax12 calls it a "poke" cake because she literally pokes holes into the cake, into which the jello mix can seep. This results in a rainbow effect! Because when you cut slices from the cake, you can see the different colors of jello inside :D

This recipe is so cute and simple to make :D can you believe that this entire "cake" is actually made of many smaller cupcakes? I also really love cookie monster and especially appreciate the nice touch with the big cookie that he is eating :D

This cake looks delicious and really, really easy to make. I love ice cream sandwiches...I have not had one in a long time. Anyway, I would totally make this cake if only I had a springform pan. I can't really think of any other kind of pan I could use for this recipe that would make it easy to remove the cake once it is done setting in the freezer. Also, I would have chosen different flavors for the ice cream. I think I would have put a double fudge brownie ice cream as the bottom layer, then sprinkled cookie crumbs in the center -- without putting the chocolate and caramel drizzles -- and then a top layer of vanilla.
