Suki: A Like Story by Clamp h as only three volumes. I haven't read the last volume but its a fairly cute story.
I also know of a manhwa called Priceless which also has three volumes but I don't remember who its by.

Wow i really like this thread, cool idea! It helps me a great deal. I was looking for short stories too. I know some, but the are all added to the list already.
Samurai Champloo only 2 volumes, i never knew that! I definitely want to get it now.

Metamo Kiss has three volumes. There's another series called .Hack//XXXX which is two volumes. Gyo is two volumes long.

I usually like to read longer series, but two short ones I really enjoyed were Dramacon (one of my favorites) and The King's Pawnshop. They were both really good.
Dramacon is three volumes and The King's Pawnshop was one volume.
Oh, and I also liked Caramel Milk Tea which was also one volume.

baby birth is only 2 volumes. the story is so-so, but the art is incredible.
witches is also only two volumes, and is really great, but it's hard to find.

Tokyo Mew Mew (7?) <A lufferful manga, much better than a la' mode.>
Voices of a Distant Star (1) <TOTALLY WONDERFUL! Best shojo manga out there.>
Chobits (8) <so~ cute, but a little pervy, but too pretty to matter.>
Alice 19th (>10) <Pretty art and a good concept to boot.>
Godchild (>10) <a wonderfully wonderful series with a beautiful ending.>
Aqua (2) <a good, futuristic series. A prequel to Aria.>
Wanted (1) <an adorable pirate love story by the author of Vampire Knight>
Full Moon wo Sagashite (>10) <a cute little love story>
Kamichama Karen (>10) <the cutest little God you'll ever see.>
Meru Puri (>10) <by the same person as Vampire Knight and really adorable>
Uzumaki (3) <the art is really pretty and realistic. A true work of art.>
Beautiful People (1) <Tis good, tis good.>
Yup. That's all I can think of for now. Hibiki's Magic is good, but it's on going and only two volumes so far... it looks like it should be short, though.

I have a few titles on my book shelf, I give the titles of short series I have.
Pixie Pop by Ema Toyama, three volumes long, mostly a magical girl- style love story.
Backstage Prince by Kanoko Sakurakoji, two volumes long, about a secret realationship between a highschool girl and a popular teen actor.
Densha Otoko by Hitori Nakano and Wataru Wantanabe, three volumes long, a geek gets advice off a message board to impress a girl he met on the subway.
Dream Saga by Megumi Tahikama, five volumes long, a young girl finds a magic stone that allows her to enter the dream world.
I-O-N by Arina Tanemura, one volume, a school girl can use psychic powers whenever she chants her name.
Tokyo Mew Mew by Mia Ikumi and Keiko Yoshida, five volumes long, five girls are given power based on those of endangerd animals to fight aliens.
Tokyo Mew Mew ala Mode by Mia Ikumi, two volumes long, sequil of the original series, the girls gain a sixth member to fight off a new threat.
Mamotte! Lollipop by Michiyo Kikuta, seven volumes long, a girl is protected by two young wizards after she swallows a magical pearl.
As you can tell I read a lot of manga, actually the series listed above are the only ones I have completed.

Alice 19th- I've read this series and absolutly loved it.
Wanted- I read this one too. I really liked it. I wish it was longer though.
Backstage Prince- I read this too. I haven't read the last one yet but I have it sitting on my bookshelf.
Densha Otoko- I own this one too. I loved it and really need to reread it.
Mamotte! Lollipop- Oo... I really want to read this one. I saw the first couple episodes of the anime and it was really good.
@Honey-chan: I own a lot of manga too. Lately I have been buying a few volumes in a series and then move on so now I have like 10 series started. lol

i can't think of any right now, but have you ever thought of one-shots?
there's many where it is just one volume of many stories~
and that's definitely very short! sorry i can't help more with your list..
i can't think of any from top of my head ^^ ;;

I started reading manga a while ago so... I dont really know much!
Though I started 'Tenshi ja nai' and its only 8 volumes...pretty short
in comparison to hana kimi...
