Poopy.

I'm so exhausted running around with my grandmother shopping, then trick or treating with my infant nephew, I just don't have the time to make my cheesecakes!!

Depending on when this contest ends, I will prolly get the food pics entered if there is a thanksgiving event. Or maybe on Christmas. But I do think either way I will pm anyone interested in the recipe, once I can get to test it out. I want to make sure the consistency is correct and that it will bake well.

I've made cheesecake before. My first one was a cherry filled cheesecake with a chocolate ganache top. Then I did the new York style for my brother in laws birthday. I don't know why, but for some reason my friends, and in-laws, love my baking. Especially the homemade ones. I've never made homemade brownies. Yet.

But, I do love experimenting, so I'm doing that with this cheesecake recipe. My gramma said I'm no longer allowed to experiment with cooking. Lol. My last experiment besides doing stir-fry with new sauces, was baked chicken, sliced onions and granny smith apples, with some cinnamon sprinkled on, the light dusting of salt&pepper, and some lemon juice.

Are we allowed to do a proof photograph with our username and a more artistic photo without it? If not, that's okay, it just means I have to rethink how I'm going to set up this shot.

@shadami
Yes u can! Nice applejack costume!!!

@amani
Wonderful! Hope your experiments turns out well.
Personally I don't think sour cream will do much other than added add a kick of tartness
Consistency wise, it might make it more moist

@woody
Thanks
I took a super close up of my name because of my last entry lol

@VOX
WHAT DOES THE VOX SAY?
Also you totally can! Tons of people do it and as long as it is in the same surroundings you should be good :-)

I somehow forgot my other entry was in this category as well. Couldn't get any fresh sage either so I had to use dried herbs.

They are mushroom tops, stuffed with blended tofu seasoned with garlic and Italian herbs, and topped with a black olive slice to make the pupil. Inspired by this recipe. We didn't have the dried tomatoes, to naturally I improvised with ketchup to give them a bit of the desired color. (Surprisingly, they tasted even better that way! xD)

Weeee. My first batch of cheesecake is in the oven.

Lol, I had my bf help me taste test the flavors of the cheesecake before I added in the egg. But he got frustrated, I hadn't known he had anything to eat till I was teasing him with the blend. XD

I'll work on the sour cream batch next and get pictures and such up soon. Plus the recipe. (I hadn't forgotten Woody! :D)

I'll take one plate of mushroom eyes for my appetizer and some risotto for the main! Nice entries guys!

I'm so bad. I'd steal tastes after eggies to. Granted, I'm in the clear here since the eggs are from our own chickens. So no fear there from them being raw.

So, recipe. Rather a straight forward one.

I used

Filling;
1 pkg (8oz) cream cheese
1 egg
1 tsp vanilla extract
1 3/4 tsp pumpkin spice emulsion
1/2 tsp cinnamon
1/4 tsp nutmeg
1/3 cup sugar
*Optional* 1/3 cup sour cream

Crust;
1 TBSP stick butter
1/2 tsp vanilla
less than 1/4 cup of sugar
three "sheets" of graham crackers, crushed/pulverized.

preheat oven to 325 degrees F.

Blend cream cheese, sugar, vanilla, and the emulsion together till creamy, testing to see if the taste is to your preference. (Can also add sour cream in this step if you include sour cream. I made batches of both with and w/o) Then add in the egg.

Melt the butter and bowl into a bowl with the crushed cracker crumbs, sugar, and vanilla. Mix together. Grabbing a muffin pan and spray with Pam, or any other cooking spray you like. Gently use a paper towel to absorb the excess spray. Spoon in the crumb mixture and gently press down.

At this point, if you like and have the patience, you could bake the crust a little, maybe 5 or so minutes to help it set up, but I did not have the patience, so I poured in the batter and placed tray in the oven. About 8-10 minutes, or more. You want the batter to be firm, but still jiggly. Or just use a toothpick. If it comes out with a little bit of batter, its done. Frankly I know its done when the top cracks a little, which to some means its over-done, but not burned. Oh well.
