Pretty sure the reason it's unholy is because humans are omnivores. The bible states not to eat anything that isn't picky about where it gets its food.
And yeah animals are exempt from the law because they're non-sentient.
As for blood transfusions, it's a different game because they didn't exist during the time the bible was written. According to Jewish law though, the closest thing to people actually following biblical laws that we have, blood transfusions are fine because they're about saving lives (I just googled this).

They having a different language that unable human and animal communicating doesn't mean they don't know about thinking.
For me, I think that is a language gap. XD haha.
Some animals and human even have a hearing gap, since they only emits ultra sound.

Yeah that part is definitely a matter of opinion. I have no idea what animals think like.
