My mom used to make this one kind of muffin all the tine, morning glory muffins they call them. They've got carrots, apples, coconut, raisins, and walnuts in them. They're very good.

I haven't had one of those in a long time. Just bought a new muffin pan recently. May have to pick up some stuff to make those muffins.
