Thanks Belly! I just omitted the molasses in the gingerbread and added food coloring. Then I eyed it and cut each piece out, which is kinda stupid.

I used a nice, yummy, Irish breakfast tea, but you can use any kind of tea you like.
Each batch makes 36 cookies, and it takes three tea bags per batch. And you just tear open the bag and dump the actual tea leaves into the cookies.

The recipe for this hot chocolate doesn't use any sugar! The recipe is basically this:
  1. Warm milk on the stove. Add loose earl grey tea leaves and steep for a couple minutes. Strain out the tea leaves and put the milk back on the stove.
  2. Chop up some unsweetened chocolate and whisk it into the milk until it's fully melted and incorporated.
The result is a hot chocolate that is quite dark and creamy, but not as bitter as it sounds. I think the natural sweetness of milk takes the edge off and the earl grey flavor blends really nicely with the dark chocolate. This time I also added a dash of vanilla extract and some cinnamon on top.

1 cup shredded sharp cheddar cheese
5/8 cup flour
1/4 cup butter, melted
dash or two of cayenne pepper

Mix everything together with a wooden spoon until dough forms.
Shape by hand into a log. Wrap in plastic wrap and chill in refrigerator
for an hour and a half.

Preheat oven to 374 degrees and place parchment paper on a cookie
sheet.
Slice dough into 1/4 inch slices and place on prepared baking sheet.
Bake for 12-15 minutes or until light brown.
Makes about 20.
Recipe my be doubled.

Sugar Plum Sweets

I don't have a PDF or anything with the recipe, but I can jot it real quick here.
1 stick butter
3/4 c flour
1 Tbs sugar
2 c whole milk
1 c whipping cream
1/2 c thick chocolate milk
cinnamon sugar

Topping:
1 c whipping cream
2 Tbs powdered sugar
2 Tbs sugar

Rommegrot: In one pan simmer whipping cream and whole milk, stirring so as not to burn. In second pan melt butter to liquid and stir in flour until a butter/flour crumb forms. Ladle in the warm milk and stir together until it has a thick pudding texture. Add chocolate milk to simmered milk and continue stirring it into pudding. Stir in sugar, mix to desired thickness and pour into serving glasses. Remember, you don't need to use all the milk. Top with cinnamon sugar.

Topping: Mix all ingredients and whip until stiff peaks form. Scoop onto rommegrot and serve. Sprinkle a little cinnamon sugar on top for presentation.

Normally you'd eat rommegrot hot or warm, but this sweeter version tastes delicious chilled. And according to Google my family has been making it different anyway. It's apparently a more savory dish and we've taken the sweet treat route.

The regular way we'd make it is without the chocolate milk, half and half instead of whipping cream, and we'd top it with melted butter and cinnamon sugar instead of whipped cream. I could eat a tub by myself.

No, it looks like it is due to how I served it. I originally was going to put it in a teacup to showcase the beautiful texture of this dessert, but then I remembered I lost those and forgot to buy new ones. The version I made is fairly thin, but it's still a rich pudding. I've got it in the freezer right now, but I've had a cup already and I like it. Oh, crap, I forgot the chocolate milk I used is really thick, like Swiss Miss, and is flavored lightly with mint.

I may get more of that milk and make hot chocolate, though. Something minty, cinnamon-y, and with coffee. The smell of barbeque chicken cooking right now is not making me any less hungry.

It's up to you! If you want to enter something other than cookies in the sweet category, I suggest you take them all together. If not, just don't go over the limit to enter the category. :D
