It's a good idea to "cash in" your stars when you get enough for an item, because as you say, it may get rather hectic at the end, and the site could slow down quite a bit.

I believe it was extended because it started late.
I know that I was on until midnight the day it was supposed to start, but it still hadn't started until sometime in the early morning hours.
