I think it's fine to go overboard. My neighbor is having me help her bake cookies for a Relay for Life event her job is supporting. Tomorrow we're gonna go grab stuff and bake all day, or at least until I have to go to work, then she's on her own.

Can I come live with you? And eat with you? Maybe steal stuff from your fridge I've been wanting to do bacon-wrapped jalapeno poppers for a while, but I'm terrified of screwing up and wasting good food. I almost did that with bacon-wrapped chicken WHICH IS FREAKING HARD SINCE THE STUPID CHICKEN PLUMPS AND THE BACON SHRINKS AND THAT STUPID TOOTHPICK WON'T STAY IN PLACE!! *fumes*

It's that layer on the pig that has skin and meat held together by a layer of fat. It's seasoned and heavily salted to stay preserved and it has some of the best flavor that I've encountered in pork products. I don't eat the bits with skin, but I love chewing the flavor out of them. It's a bit leathery, but still good. I make the soup with green beans, fresh peas, carrots, pearl onions, corn, potatoes, celery, salt pork, and either pork broth thickened with flour, or water thickened with milk and flour. Pepper and occasionally something spicy to taste, and no need for more salt. My grandma used to make it with this incredibly thick, dense bread that absorbed all the juice.

I... don't know why I'm still awake, but that sounds super delicious. Can't wait for pics. I should have snapped some of the chili/goulash/thing I made today. It wasn't perfect, but now I have to go and buy a buttload of noodles just to get the spice packets. And, my god, are these packets hot. I poured a fraction into a whole, family sized pot and it didn't burn, but it made me fell warm inside for a good two hours afterwards.
