There are all kinds of substitutes for things now. I've seen pink seaweed before. I don't know what it's made out of, or what it tastes like, but it's for those who don't like seaweed but still want the sushi experience. I can't help you with couscous, though.

I use it as filler for [savory] pies.

Oh wait...I see the question.

It's worse in organic foods because...um....well, it can't be from pesticides cuz they don't use them. I don't know why. It just said that two brands of organic baby food with rice had extremely high levels of arsenic.

There was an article in our local paper, and again on CNN about arsenic in apple juice. High amounts, too, which was unfortunate because one of my family members drinks it often.

I wonder if it's not the way it's processed instead...?

Probably so.. I skimmed the article, so I didn't get all the details.

It also said that there was salmonella in cucumbers, which I eat a lot of.

It happens from contamination of processing surfaces. If you don't properly clean equipment, or somehow you handled raw meat, then went right to work handling cucumbers without washing up, it can contaminate everything.

I like wafer cookies, too.

Like a...sugar substitute? I imagine a nut butter might help, but the sugar is a binder and I can't think immediately of what to replace it with.

They make some sugar substitute stuff especially for baking.
It's supposed to help, but be fewer carbs than regular sugar.

I'd also use sugar free choc chips (which I use in a trail mix I make),

I'm really weary of using a sugar substitute aside from honey or other spices.
I should try to play around a little bit, though, because one of my friends' husband is diabetic and I'm always baking things for her that he shouldn't be eating.

I did a quick look, and saw that brown sugar was mentioned, but white sugar was replaced with mostly Splenda.

Murray makes great sugar free cookies.
I eat them mostly. But their chocolate chip are too crunchy.
