I do not know why, but I really hate raw pumpkins. ._. They smell bad... that is why I am never in the kitchen when my sister and mother are carving them for Halloween.

Honestly - I hate pumpkins too.

The only part of it that I'll ever eat is the seed.

But my family tends to have a lot of pumpkin food around the holidays: pie, soup, bread, etc. So I'm stuck smelling it for weeks on end. It's just something that I've come to accept...

I don't know why, but for some reason I'm in the mood for Spanakopitas!

Quote:
Ingredients:
1/2 cup vegetable oil
2 large onions, chopped
2 (10 ounce) packages frozen chopped spinach - thawed, drained and squeezed dry
2 Tbsp. chopped fresh dill
2 Tbsp. all-purpose flour
2 (4 ounce) packages feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper to taste
1 1/2 (16 ounce) packages phyllo dough
3/4 pound butter, melted

Preheat oven to 350 degrees F (175 degrees C).

Heat vegetable oil in a large saucepan over medium heat. Slowly cook and stir onions until softened. Mix in spinach, dill and flour. Cook approximately 10 minutes, or until most of the moisture has been absorbed. Remove from heat. Mix in feta cheese, eggs, salt and pepper.

Lay phyllo dough flat and brush with butter. Place a small amount of spinach mixture onto each piece of dough. Fold phyllo into triangles around the mixture. Brush with butter.

Place filled phyllo dough triangles on a large baking sheet. Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.

Aw, I wish I had some candy canes now. You'd think that there would be at least a few lying around the house, but I don't think we bought any this season.

It's a crime, I tell you...

I was rummaging through the pantry this afternoon, and to my horror I realized that we don't have any real holiday candy. We've got some hard candies that are colored red and green, but that's it. No gumdrops, no candy canes, no M&Ms, no nothing.

I want to go out and buy some more, but all the stores have been crazy. I'll just con my brother into picking some up. =)

I'm up to 91 right now. I had much more, but I'm buying multiple sets of each winter item we release.

Just keep hopping around the site, and you'll get plenty.

You only need 10 to get this first item.

And if you ever have any questions about the event, just check out Eroy's FAQ:

She has pretty much all the answers over there.

Hehe, I never bought any candy canes either! My friends at school got me a whole bunch. I said I did not need any, but they slipped them into my pocket when I was not looking!

I always wonder what would happen if someone tried to steal from my pockets. I probably would not notice...

Time for another recipe!

This time, it's Four Cheese Mexican Tortillas.

Quote:
Ingredients:
6 (6-inch) fajita-size flour tortillas
1 can (16-oz.) Refried Beans
1/2 cup Taco Sauce (I use Medium or Spicy)
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup sliced green onions
1/4 teaspoon crushed red pepper,
2 cups 4 cheese (Mexican blend)

Preheat oven to 400º F. Place tortillas on baking sheet(s).

Bake for 3 to 4 minutes or until crisp.

Spread refried beans evenly on tortillas. Spread 1 tablespoon taco sauce over beans. Top with bell peppers, green onions and crushed red pepper. Sprinkle with cheese.

Bake for 7 to 8 minutes or until cheese is melted. Cut into wedges.
Simple, but you can't deny the taste.
