turkey and chicken are my go to proteins

Turkey might take a day to cook, but you can get a weeks worth of food from one. Usually the meat is really cheap too.
How do you handle potatoes?

i cook the turkey breast so it doesn't take too long
potatoes i can eat, but only a small portion
i don't do gravy with it either

You don't buy the whole turkey? I get legs, wings, body and all.

If you have a Cuisinart you could make hashed browns perhaps using a single potato. It's in the shape of shredded cheese so it makes it easy to portion out how much you want and you can season it pretty much any way you want.

I try not to waste food. I hate the ends of bread though, but we make sure the crows get them ^^
