Sloe Gin

Pick sloes in early September (they are not good to eat raw D': ), with approx 8g of sloes to every 7ml of gin. eg. 800g sloes + 700ml of gin = 1 litre of liquer.
Gin should be as strong as possible - at least 40% ABV, but preferably more.
You will need two clean dry 700ml bottles for one litre, +280g of sugar.
Put half the gin and sugar into each bottle. Wash and dry the sloes + pierce the skins before they go into the bottle. Agitate daily until the sugar vanishes, then occasionally for about three months. The sloes should shrink to about the size of raisins, and the liquid maroon.
