In the scattegories... those things confuse me, or do we just try our best? Can we submit multiple scattegories

You fill in as much as possible within 5 minutes. Once you submit a puzzle, that's all you get.

How many times you roll, yes.

Oh so if we roll a letter that completely stumps us we can go again? awesome!

If you take the five minutes to complete the puzzle but find that you weren't able to submit it in time, then yes.
