Well, you could open it until you get too busy

Yeah, just only keep a few slots open at a time so you can keep up and won't end up having a ton of people waiting on you when you get busy. Then you can just close up as soon as you're too busy.

I don't think it would take too long to update. You could just change the prices.

Instead of worrying about making tons of little adjustments, just click edit and blank the whole thing. Same as starting a new one, really.
