Hmmm.... a rice omelet because it's so easy. But I think the recipe I enjoyed the most making to memory was vegan spring rolls.

Well, I haven't gotten it from my future sister-in-law yet, but there are these INCREDIBLE muffins she made for new years, they tasted peanut buttery, then they had raspberry jam in the middle, they were DELICIOUS.
She's an amazing cook in general. She made these cupcakes that were so moist and delicious, with sweet peanut butter icing, omg.
I asked for the recipes, and she said she'd give them to me, but people tend to forget these things, so I haven't gotten the email with them yet.
Now I'm hungry. .__.

Banana cake! The two Kidas should understand that one a little and so should Korrection. XD
I've even earned the nickname Banana Cake for my habit of making them so often. (with the help of my sisters, of course.)
They're really really good and pretty easy to make, so that would have to be a favorite recipe.
Flan is another fun one, too, especially with home made whip cream on the top. Getting all the chunks out is a bit of a pain, but it's still amusing to make. (That is, unless you're eggs have too much flavor for their own good. =.=;;)
In reference to 4nj3L:
I'm kind of interested in that rice omelet recipe you've got if you're willing to share. Egg omelets are fun and all but rice omelets sound like a fun endeavor.

I like to make all sorts of things, but right now I'd just love to make a spicy grilled cheese and some tomato soup.

One of my favorite recipes, is arroz con leche, because my mother use to make it for me all the time when i was younger. I use to eat a whole lot of it, and she told me if i was good, she would make it for me everynight. It brings back soooo many memories, because she mostly made it during the winter time, (around christmas time)

I have two...My Grandmother was a phenomenal cook (too bad it skipped a generation and my mom was a mediocre cook at best). My grandmother made the best spaghetti...It's a secrete recipe and whenever someone is going to try it for their first time, they are not allowed to know any of the ingredients...Because if they did, they probably wouldn't eat it with an open mind. It is not your normal tomato based spaghetti.
She also made the best soup ever. I have that recipe and made a huge vat of it when I was finishing grad school and prepping for my final exam with my classmates. We all ate soup, studied flashcards, and we all passed the exam. Maybe it was my Grandma's soup that did it! Sadly she passed away a few years ago...and I am so sad I will never had soup made by her again. I can make it, but it's just not the same as when she did it.

It doesn't have a name, but it's popular in my house. I made it up one day when I was broke and the cupboards were bare.
It is as follows:
1 can vegetable broth
1 cup uncooked rice
1/2 roll of sausage
1 cup (or so) of frozen corn
Cook the rice in the veggie broth
Cook the sausage
Cook the corn
Combine everything
Enjoy!
It's yummy!
You can use mixed veggies as well.

@dream: That sounds pretty good. You could probably use chicken broth instead and the meat could vary either way it sounds tasty.

I've used beef broth and ground beef. It was okay. It was another case of old mother hubbard. We modified the recipe. I probably wouldn't do it again. Then again, I used cubes instead of canned broth.
*wanders off thinking*
