Ingredients

2 eggs, beaten - weigh these eggs; the other ingredients should weigh the same
x amount of caster sugar
x amount of butter/margarine

Instructions

Grease two sandwich tins heavily; don't spare on this. Cream the fat and sugar until light and fluffy. Add the egg a little at a time, beating well after each addition. Fold in half the flour, using a metal spoon, then fold in the rest. Place half the mixture in each tin and level it with a knife. Bake both cakes on the same shelf in the oven (if it hasn't got a fan) at approx. 190C for 20 minutes, or until they are well risen, golden, firm to the touch, and beginning to shrink away from the sides of the tins. Turn out and cool on a wire rack. When the cakes are cool, sandwich them together with jam and sprinkle the top with caster sugar.


I used black cherry jam, and it was a nommy cake <3 (still is; my brother isn't home yet XD)

Edit: o.o I just realised, in the photo it looks like it has some weird fungus on the top x.x;;; it's not, it's sugar.
