I'M ALIVE!! Hey guys, sorry for neglecting the thread. >.<"
So I'm not a big tofurkey person, mostly because no one in my family bothers to cook it. For me, Thanksgiving is "everything but the turkey" day. :D
Begin conversation!

I hope everyone had a nice tofurkey day! I myself didn't have tofurkey either, just lots of sides and a delicious stew my mom made for me. :) And I come bearing some recipes that we tried! It's too late, of course, to use them for thanksgiving, but the pie will be perfect for Christmas parties, and the stew is good any time!

3 oz. unsweetened baker's chocolate
1 cup butter (cannot be substituted with margarine!)
1 cup sugar (other sweeteners cannot be used, must be sugar)
1/2 tsp. vanilla
4 eggs (pasteurized if you prefer, as there will be no baking)

If you choose to use a traditional pie crust, bake it now, as per the directions on the packaging and let it cool thoroughly before continuing.
In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended. Add eggs 1 at a time, beating on high speed for 2 minutes after each addition; beat until mixture is fluffy. Pour into pie crust. Refrigerate at least 2 hours before serving.

* The recipe calls for a normal pie crust, but blech! Too bitter, it'll ruin it entirely. The graham cracker crust we used was perfect.

1 box rice a roni long grain and wild rice with spice packet
1/2 cup brown rice
1 can white kidney (canelli) beans
2 stalks celery, chopped
2 slices of onion, chopped
6 oz. standard frozen mixed vegetable mix (green beans, carrots, corn and maybe peas. You know the one)
Approx. 2 oz. frozen green beans
Approx 2 oz. frozen asparagus (optional)
A lot of poultry seasoning **
A little bit of cilantro
A little bit of garlic powder

Prepare rice a roni according to directions in large soup pot with brown rice. Substitute 2 cans of vegetable broth for the water required. Add everything else and let simmer 20-30 minutes.

* Do not use Campbell's cream of celery if you are vegetarian! It has chicken stock in it.
** Sorry, we don't really measure spices when making up our own recipes! Just... a lot. And despite the name, this seasoning mix has nothing to do with meat. Many different brands make it, and it's my absolute favorite spice mix. I recommend it!
It's a very hands-off meal, so it's perfect for holiday cooking, where you're also tending to a million other things. It takes a while to cook, though. About an hour. It's very worth it, though! If you can't find the rice a roni mix, you could probably substitute more brown rice and some wild rice, but the seasoning packet in the mix is soooo good, get it if you can.
