So I'm not a big tofurkey person, mostly because no one in my family bothers to cook it. For me, Thanksgiving is "everything but the turkey" day. :D

i only ate stuffing, sweet potato caserole, green bean casserole and sweet corn.
i'm more of a day after thanksgiving turkey eater.
i love it sliced thin with cranberries and stuffing pancake sandwhich.

I hope everyone had a nice tofurkey day! I myself didn't have tofurkey either, just lots of sides and a delicious stew my mom made for me. :) And I come bearing some recipes that we tried! It's too late, of course, to use them for thanksgiving, but the pie will be perfect for Christmas parties, and the stew is good any time!

** Sorry, we don't really measure spices when making up our own recipes! Just... a lot. :lol: And despite the name, this seasoning mix has nothing to do with meat. Many different brands make it, and it's my absolute favorite spice mix. I recommend it!

It's a very hands-off meal, so it's perfect for holiday cooking, where you're also tending to a million other things. It takes a while to cook, though. About an hour. It's very worth it, though! If you can't find the rice a roni mix, you could probably substitute more brown rice and some wild rice, but the seasoning packet in the mix is soooo good, get it if you can.
